Coffee Description
Ethyl Acetate is derived from the fermentation of sugar cane! Coffee is steamed to open up them pores, then is placed in a solution of EA and water, which acts as a solvent to remove the caffeine. As the beans get more and more saturated, the solution is drained and refilled for about 8 hours. Science occurs, and caffeine leaves the beans. Next, the beans are removed and steamed again, which somehow removes the traces of EA in the beans. The coffee is then dried, polished to get you that nice and shiny bean we all know and love, and then bagged up to be sent to the D&W roastery.

Dapper & Wise
In 2013, Insomnia's owners Evan Aldrete and Tyler Geel launched Dapper & Wise as a tasting room and roasting facility in Portland's Western suburbs, and by 2014, as a wholesaler as well.
Based out of Hillsboro, Oregon, Evan and Tyler work with a stellar team, all of whom are dedicated to the values that undergird Dapper & Wise: “We want people to walk through our doors and feel welcome. We want people to taste our coffee and be impressed and inspired. We want the coffee we roast to exemplify the hard work of the producers that grow it.”
